Chickpea Peanut Butter Cookies

Chickpea Peanut Butter Cookies

Look no further for a delicous treat that you can feel not guilty eating!

Ingredients

  • 1 can garbanzo beans
  • 1/2 cup + 2 tablespoons of natural peanut butter
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 3/4 dark chocolate chips or carob chips

Instructions

  1. Preheat oven to 350°/ 175C
  2. Line baking sheet with parchment paper
  3. Comebine all the ingredients in a fod processor except the chocolate chips, blend until smooth
  4. Add chocolate chips
  5. With wet hands, form into 1½" balls. Gently press fork down to make edges and cookie shape
  6. Bake for about 15 minutes ( more if you want crispy). They store well in the fridge or freezer
  7. Try not to eat them all at once 🙂
