Chickpea Peanut Butter Cookies

Look no further for a delicous treat that you can feel not guilty eating!

Ingredients
- 1 can garbanzo beans
- 1/2 cup + 2 tablespoons of natural peanut butter
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- 3/4 dark chocolate chips or carob chips
Instructions
- Preheat oven to 350°/ 175C
- Line baking sheet with parchment paper
- Comebine all the ingredients in a fod processor except the chocolate chips, blend until smooth
- Add chocolate chips
- With wet hands, form into 1½" balls. Gently press fork down to make edges and cookie shape
- Bake for about 15 minutes ( more if you want crispy). They store well in the fridge or freezer
- Try not to eat them all at once 🙂
